This is a great soup for dinner on a cold winter night! Serve with rice crackers or corn chips. For a more filling meal, I like to serve it over basmati rice.
This soup freezes well for later use. Freeze it in a large 6 cup muffin tin. After it freezes, pop the individual soup 'cups' into a Ziploc and keep in the freezer for a quick and easy lunch with a zap in the microwave.
