This appetizer goes well with a variety of crackers. Pre fill 'Scoops' and place on a platter to make a festive presentation. When I am in a hurry, I use roasted red peppers in a jar. Drain and dice and substitute for the 1/2 cup broiled red pepper in the recipe. This makes it a quick and easy dish!
