Looking for variety at lunch or a quick easy to make appetizer? These stuffed tomatoes are always a big hit! I like to use the Campari tomatoes, but you can 'up size' the tomato and create a meal out of this. For added variety and flavor, I like to drizzle a little balsamic vinaigrette over the top of the stuffed tomatoes before serving!
